BAKE 219 - Yeast Fundamentals


Course Description
Learn the various varieties of flour, how to mix them to create doughs and how baking additives and processes impact the product results. Mix rich and lean doughs to create products such as conventional breads and cake and yeast doughnuts. Learn how to control the fermentation process to produce sourdoughs and pre-ferment doughs.
