NUTR 313 - Nutrition and Home Meal Replacement


Course Description
Understanding of human nutrition as it pertains to food and the food industry through the analysis of traditional diets and dietary trends. The creation of menus and recipes to meet special dietary requirements relating to conditions such as heart disease, diabetes or celiac disease or personal preferences such as low fat, vegetarian or vegan diets. Logistics of operating a Home Meal Replacement/Deli facility including cook-chill, sous vide, labeling, packaging and shelf life considerations.
