FDPR 105 - Red Seal Exam Prep


Course Description
SAIT’s Red Seal Exam Preparation course is a two-week culinary training program designed to arm participating chefs with the knowledge and hands-on experience required to write the Red Seal cook exam. This program is designed for chefs in industry with significant work experience (minimum of five years) and examines the following aspects of professional cooking: Kitchen management, hot and cold foods, baking, nutrition and meat cutting

The Red Seal exam is administered by Alberta Apprenticeship and Industry Training (AIT). It is the responsibility of the participating chef to ensure he or she meets AIT’s requirements and is eligible to challenge the Red Seal exam.
